Las Cabras Distillery was started in 1919 when it was a sugar factory. Since then, ownership has changed several times.
In the mid-nineties, Francisco Jose Fernandez Perez, or "Don Pancho" as he was called, and Carlos Esquivel (CEO of Proveedora Internacional de LIcores, S.A. (PILSA)) discovered the neglected warehouse.
Under the overgrown grass, they discovered a copper column still with a small medallion inscribed with "Cincinnati 1922" and decided to create a modern production facility for Rum.
Now the facility has a five-column continuous distillation installation that distills Rum from molasses, fermented with a custom strain of pineapple yeast.
They use barrel aging and blending methods that are directly comparable to the Cuban style production.
The facility produces its own brands, including their Caña Brava Rum, and collaborates with a number of others, offering all levels of branding service.
