St Bridget´s Kirk Solera Batch #1

This exceptional whiskey is created in a unique way by blending malt whiskeys from different distilleries and different spirit styles.

 

Each batch is small, bespoke and distinctly different from the last. It is blended, compounded, bottled and hand-labelled in its own warehouse, where it is worth noting that no artificial coloring or chill-filtration takes place.

 

A custom-built solera system has now been installed in the warehouse.

The solera system has its roots in the sherry and port industries and involves several linked casks. When whiskey is drained from the last cask, the first cask is refilled. The Solera system used here consists of one ex-Fino sherry cask and two ex-Oloroso quarter casks. The whiskey passing through the system will absorb new, deeper flavors from these casks.

 

This exciting first batch has the heaviest impact, as it is the first use of the casks and creates something of a sherry bomb. However, this is mitigated by the peaty element in the blend, which brings life and freshness.

 

Tasting reveals a complex character with roasted orange peel, fudge, leather, coffee grounds and subtle smoke.
